Partying the pastry department – responsibilities Plan and organize the pastry department, managing daily and weekly production, mise en place, raw materials, tools, and work distribution to ensure efficient production aligned with hotel occupancy and service needs (restaurants, buffets, banquets).
Direct, prepare, and supervise pastry production, ensuring correct recipe execution according to menu cycles and hotel standards;
apply proper food handling practices and adapt production to client needs and special diets.
Organize, direct, and supervise pastry staff, assign tasks to assistants and cooks, monitor timing, performance, and quality, and contribute to team training under the kitchen head’s guidance.
Ensure quality, presentation, and standardization of desserts, adhering to image, flavor, and finishing criteria, and participate in developing new offerings within the hotel’s gastronomic range.
Oversee cleanliness, order, and maintenance of the pastry area, ensuring correct use and upkeep of facilities, equipment, and utensils, and proper storage and rotation of raw materials and finished products.
Ensure compliance with hygienic-sanitary and food safety regulations;
supervise HACCP implementation, records, temperature control, expiry tracking, and traceability;
assist with reception, storage, and control of goods per established procedures.
Education: Advanced Vocational Training in Kitchen Management and/or Hospitality, Degree in Tourism, and APPCC training.
Experience: minimum 2 years in a similar role.
