We are looking for a Sous Chef for Ammos, our Greek restaurant located in our seasonal venue, METT Marbella-Estepona.
Assists the Chef de Cuisine in the daily operation of the kitchen, overseeing overall kitchen activities.
Leads the kitchen in the absence of the Chef de Cuisine and conducts regular team briefings.
Supervises and trains kitchen staff to ensure high performance and consistency.
Ensures the accuracy and quality of received food products and other supplies required for daily operations.
Ensures all relevant documentation is submitted to the Chef de Cuisine in a timely manner.
Inspects product quality during and after preparation and makes adjustments as required.
Assists the Chef de Cuisine in ensuring that all food products are consistently prepared and served according to the restaurant's recipes, portioning, cooking, and presentation standards.
Ensures guest requirements are met, including special requests and dietary needs.
Supports inventory management and stock control.
Previous Experience as Sous chef in a premium/ fine dining environment in resorts, hotels or standalone restaurants.
Deep knowledge and previous experience with Greek or mediterranean cuisine, with the ability to innovate while respecting tradition.
High standards in food presentation, hygiene, and quality control.
