The Role of Pastry Sous Chef :
Four Seasons Hotel Madrid seeks a Pastry Sous Chef to join our team. The ideal candidate will provide leadership and management for the Main Kitchen, establishing standards of character, integrity, and quality to ensure long-term growth and profitability. Key responsibilities include:
* Executing instructions from the Executive Pastry Chef and Executive Chef.
* Training and developing employees in the Main Kitchen through effective management and leadership, ensuring standards are met.
* Controlling labor and operating expenses via planning, purchasing, policy-making, and inventory control, with a focus on cost control and revenue enhancement.
* Ensuring compliance with hygiene and safety standards per legislation.
* Implementing control systems to maintain quality and portion consistency, and developing purchasing specifications.
* Communicating with staff to meet operational needs and attending regular meetings for coordination.
* Signing food requisitions and making adjustments as needed.
* Monitoring kitchen equipment and reporting issues promptly.
* Checking storerooms daily to ensure proper food rotation.
* Assisting in menu planning and development for hotel outlets.
Our ideal Pastry Sous Chef will have excellent interpersonal skills, provide exceptional service, and be flexible to work mornings, afternoons, weekends, and holidays. A minimum of 1 year of experience as a Pastry Sous Chef in a similar environment, legal right to work in Spain, and fluency in English and Spanish are required.
