**Key Responsibilities**
- Supervises and actively participates in the daily production of pastries, desserts and bakery items, ensuring compliance with established recipes, quality standards and production schedules.
- Prepares and presents a wide variety of pastries, plated desserts and baked goods in line with the hotel’s culinary standards.
- Ensures consistency, quality and presentation across all pastry products delivered for restaurants, breakfast service, banquets and special events.
- Develops new recipes and contribute to the creation and periodic update of dessert menus in collaboration with the Executive Chef.
- Coordinates and supports the pastry team in daily operations, ensuring efficient workflow and adherence to production timelines.
- Plans and organises pastry mise en place and production requirements according to operational demand and event schedules.
- Monitors inventory levels of ingredients and raw materials, ensuring proper stock rotation and minimising waste.
- Monitors production costs and support efficient ingredient utilisation to maintain cost control within the pastry section.
- Ensures compliance with food safety, hygiene and Hazard Analysis and Critical Control Point standards at all times.
- Prepares pastry items and desserts for events, banquets and special services in accordance with operational requirements.
