This hotel is owned and operated by an independent franchisee, Archer Hotel Management Limited. The franchisee is a separate company and a separate employer from Marriott International, Inc. The franchisee solely controls all aspects of the hotel’s employment policies and practices, including hiring, firing, discipline, staffing, compensation, benefits, and all other terms and conditions of employment. If you accept a position at this hotel, you will be employed by a franchisee and not by Marriott International, Inc.


Purpose

The Food & Beverage Manager is responsible for overseeing daily F& B operations across all outlets of a Luxury Hotel as The Palace Madrid ensuring exceptional guest experience, operational efficiency, and financial performance. You will lead the outlet managers, foster a culture of collaboration and excellence while work closely with the Head Chef to ensure alignment between front of house and kitchen operations. Reporting to the Director of F& B manager, you will be responsible for maintaining high service standards, optimizing revenue, and driving continuous improvement in all aspects of F& B operations.


Areas of Responsibility

Leadership & People Management


*
* Lead, mentor, and develop the Outlet Managers/Supervisors, ensuring efficient daily operations across all F& B venues.
* Foster a guest‑centric culture, ensuring service excellence in all outlets.
* Ensure clear communication and collaboration between the F& B service team and the kitchen team.
* Drive training and development initiatives for the F& B team, enhancing skills and service levels.
* Promote a positive work environment, encouraging teamwork, engagement, and high performance.


Operational Oversight


*
* Oversee the daily operations of all F& B outlets, ensuring seamless and efficient service.
* Work closely with the Head Chef to align kitchen and service operations.
* Ensure compliance with health, safety, and hygiene regulations.
* Maintain high service and LQA quality standards in all outlets, ensuring consistency in guest experiences.
* Implement and optimize SOPs for F& B service, improving efficiency and consistency.


Guest Experience


*
* Ensure exceptional service delivery, exceeding guest expectations across all F& B outlets.
* Actively engage with guests to gather feedback and implement improvements.
* Address guest complaints and resolve service issues promptly and professionally.


Menu & Product Development


*
* Collaborate with the Head Chef on menu updates, ensuring alignment with guest preferences and market trends.
* Ensure that menu items are well executed, cost effective, and aligned with brand positioning.
* Oversee beverage program development, including wine, cocktail, and coffee offerings.


Revenue & Financial Management


*
* Drive revenue growth by optimizing pricing, upselling/suggestive selling strategies, and promotions.
* Manage F& B budgets, including cost control, labour management, and financial reporting.
* Monitor P&L performance and implement corrective actions to achieve financial targets.


Collaboration & Strategy


*
* Work closely with the marketing team to develop and implement F& B promotions and activations.
* Build strong relationships with suppliers and partners to enhance product offerings and cost efficiencies.
* Support event planning and execution in collaboration with the M&E team.
* Contribute to long‑term F& B strategy, aligning with the overall vision of The Palace Madrid.

Work Experience
*
* Minimum 5+ years’ experience in a food and beverage management role overseeing multiple outlets.
* Proven track record of leading teams in restaurants, bars, and event spaces.
* Experience in managing high‑volume operations, balancing quality and efficiency.

Languages

* Must be fluent in Spanish and English, additional languages will be highly valuable.
