TATEL Restaurant Marbella is seeking an experienced and passionateSous Chefto join our prestigious pre-opening team for our upcoming luxury dining destination on Marbella's Golden Mile.As part of the internationally acclaimed TATEL family (backed by Rafael Nadal, Pau Gasol, and Cristiano Ronaldo), you will play a crucial role in establishing our signature haute Spanish cuisine concept that blends traditional flavors with contemporary international flairKey Responsibilities
Culinary OperationsSupport the Executive Chef in overseeing all kitchen operations for both restaurant and beach club serviceEnsure consistent execution of TATEL's signature Spanish dishes including our famous rice specialties, croquets,
and premium seafood preparationsMaintain the highest standards of food quality, presentation, and taste in line with TATEL's international reputationAssist in menu development and seasonal adaptations featuring traditional Spanish recipes with contemporary twistsSupervise food preparation across all kitchen stations including cold preparations, hot kitchen, and specialized Spanish cooking techniques
Pre-Opening ResponsibilitiesParticipate actively in the restaurant's pre-opening phase, including kitchen setup, equipment installation, and workflow optimizationCollaborate with the Executive Chef to establish standard operating procedures (SOPs) for all kitchen operationsAssist in developing training materials and protocols specific to Spanish cuisine techniques and TATEL's culinary standardsSupport the recruitment and initial training of kitchen brigade membersWork with suppliers to ensure sourcing of premium Spanish ingredients and local seasonal products
Team Leadership & ManagementLead and mentor kitchen staff,
fostering a positive and collaborative work environmentDelegate tasks effectively across kitchen stations and ensure smooth workflow during serviceConduct regular training sessions for culinary team members on Spanish cooking methods, presentation standards, and food safety protocolsManage staff schedules and coordinate coverage for all service periodsStep into Executive Chef role when required, maintaining full operational control
Quality Control & SafetyImplement and maintain HACCP standards and ensure compliance with all health and safety regulationsMonitor inventory levels, control food costs, and minimize waste while maintaining quality standardsEnsure proper care, maintenance, and sanitation of all kitchen equipment and work areasConduct regular quality checks on all dishes before service to maintain TATEL's exacting standards
Required Qualifications
Experience & BackgroundMinimum 4-5 years of professional culinary experiencewith at least 2-3 years in a Sous Chef or similar leadership roleProven experience in high-end, fine dining establishments, preferably in luxury hotels or upscale restaurantsPre-opening restaurant experience strongly preferred, with understanding of setup, training, and launch proceduresSpanish cuisine expertise required- deep knowledge of traditional Spanish cooking techniques, ingredients, and regional specialtiesExperience with Mediterranean cuisine and international culinary concepts an asset
Technical SkillsAdvanced culinary skillsincluding knife work, classical cooking techniques, and modern food preparation methodsExpertise in Spanish specialtiessuch as paella preparation, tapas creation, seafood cookery,
and traditional Spanish dessertsMenu development experiencewith ability to contribute creative input while maintaining authentic Spanish flavorsKitchen equipment proficiencyincluding Josper grills, professional ovens, and specialized Spanish cooking equipmentFood cost control and inventory managementskills with understanding of premium ingredient sourcing
Education & CertificationsCulinary degree or professional culinary trainingfrom recognized institution preferredFood safety certifications(HACCP, ServSafe, or equivalent) requiredValid work authorizationfor Spain mandatory
