We are seeking a detail-oriented and analytical
Purchasing Controller
to oversee procurement reporting, monitor supplier performance, control costs, and provide insights that help drive strategic purchasing decisions. This role will play a critical part in ensuring financial discipline, transparency, and data-driven management within the purchasing function.
Responsibilities
Analyze monthly food cost by restaurant, category, and period, identifying causes of variations and proposing corrective actions.
Review and explain monthly/weekly deviations between theoretical and actual consumption (waste, inventory errors, recipe issues, etc.).
Collaborate on continuous improvement of purchasing, inventory, and cost control processes.
Investigate systemic errors or data inconsistencies and propose solutions.
Prepare recurring cost control reports and present them to the Purchasing, Operations & Finance team.
Work closely with the BI and systems teams to ensure data integrity and consistency.
Conduct occasional audits, orders, and restaurants, inventories to verify compliance with standards.
Collaborate with internal departments (e.g., operations, kitchen, finance) to align purchasing with business needs.
Create and maintain reports, dashboards, and visualizations in the corporate BI system.
Validate data integrity and ensure proper functioning of critical KPIs (pricing, lead times, stock coverage, consumption, purchases, etc.) on a daily/weekly basis.
Participate in projects to improve tools and automate processes.
Extract relevant insights to optimize purchasing, suppliers, and supply chain.
Provide ad-hoc support to the team with specific analyses and data extraction.
Skills & Qualifications
Bachelor's degree in Supply Chain Management, Business, Finance or in related fields
3-5 years of experience in purchasing controlling, food cost, or similar areas in F&NB or hospitality
Strong command of Excel/Sheets & BI
Analytical skills, attention to detail, and critical thinking. xqysrnh
Knowledge of inventory processes, recipes, and purchasing management.
Can-do attitude, proactivity and good organizational skills
Ability to manage multiple tasks and priorities
