Job Description: Chef de Partie
The Chef de Partie is responsible for maintaining restaurant standards, responding to the instructions of the Executive Chef / Executive Sous Chef, and ensuring guest dining requests and nutritional needs are met. The role involves supervising kitchen staff and preparing all menu items according to the restaurant's standard recipes and quality standards.
Key responsibilities include:
1. Maintaining the quality, consistency, and presentation of all food prepared and served.
2. Supervising kitchen associates and addressing any deficiencies or improper practices.
3. Assisting with daily shift schedules and monitoring food consumption and wastage.
4. Communicating with F&B Service and other departments to ensure guest satisfaction.
5. Performing cleaning tasks to adhere to health standards.
6. Ensuring compliance with health, hygiene, and food handling practices.
7. Handling guest complaints to ensure satisfaction.
8. Training and developing kitchen staff to optimize productivity.
9. Conducting daily shift briefings in the absence of senior management.
10. Presenting innovative ideas to the Executive Chef and Sous Chef.
11. Attending training sessions and meetings as required.
12. Arriving on time, fully equipped, and in proper uniform.
13. Understanding and demonstrating departmental and restaurant policies and procedures.
14. Performing additional duties such as cleaning spills or fulfilling special guest requests.
15. Ensuring familiarity with fire, evacuation, health, and safety procedures, and compliance with related legislation.
The role requires commitment to the success of the enterprise, flexibility in duties, and teamwork. Candidates should possess basic computer skills, strong leadership and customer relations skills, extensive knowledge of hotel services, and a minimum of three to five years' experience in kitchen operations within a quality-rated hotel, resort, or restaurant. Certifications in international and Western cuisine cooking are preferred. Language requirements include Spanish, with English being a plus.
