OKU Hotels is a boutique collection of soulfully-curated, laidback luxury hotels, created for the modern traveler. Meticulously designed sanctuaries are conceived with barefoot luxury, local connections and slow living at heart.
OKU Hotels is headquartered in London, with current properties operating in Ibiza, Andalucia and Kos, and a confirmed pipeline of hotels set to open in Bodrum (Turkey) and the Maldives. OKU is targeting to own and/or operate a collection of over ten exquisite properties in new and captivating destinations worldwide, over the next five years.
**RESPONSIBILITIES OF THE ROLE**
- Supervise and coordinate the daily restaurant operations, ensuring seamless service in line with OKU brand standards.
- Lead, motivate and support the service team, fostering a positive, professional and high-performing work environment.
- Ensure proper mise en place, table setup, cleanliness and overall presentation of the restaurant before, during and after service.
- Monitor service flow, allocating tasks effectively to guarantee efficiency and exceptional guest satisfaction.
- Support the team on the floor during peak service times, leading by example and maintaining hands-on involvement.
- Ensure accurate order taking, billing procedures and compliance with cash handling policies.
- Handle guest requests, VIP service, complaints or special dietary requirements in a professional and solution-oriented manner.
- Collaborate closely with kitchen, bar and hostess teams to ensure smooth communication and operational excellence.
- Monitor and maintain quality standards, hygiene compliance (HACCP) and health & safety regulations at all times.
- Assist in staff scheduling, training, onboarding and performance follow-up.
- Support stock control, inventory management and cost control procedures within the department.
**CANDIDATE REQUIREMENTS**
- Minimum of 2-3 years’ experience in Food & Beverage operations, including at least 1 year in a supervisory role within luxury hotels, high-end restaurants or lifestyle hospitality concepts.
- Strong background in fine dining or high-volume service environments.
- Proven ability to lead and coordinate service teams effectively.
- Based on the Costa del Sol or willing to relocate.
- Ability to work in a dynamic, fast-paced resort environment with versátil schedules, including weekends and holidays.

- Solid understanding of hygiene regulations (HACCP) and health & safety standards.
- Experience with POS systems, reporting tools and basic operational analysis.
