Key Responsibilities
Food Preparation:
Prepare high-quality sushi, sashimi, rolls, and other Japanese dishes according to recipes and standards.
Presentation:
Ensure dishes are plated with precision, artistry, and consistency.
Ingredient Handling:
Maintain freshness by properly storing, handling, and rotating fish, seafood, and other ingredients.
Guest Experience:
Engage with guests when appropriate, providing information on menu items and making recommendations.
Hygiene & Safety:
Adhere strictly to food safety, sanitation, and hygiene regulations.
Collaboration:
Work closely with the culinary team to support menu development and special events.
Training:
Train and mentor junior kitchen team in sushi preparation techniques.
Inventory:
Assist with stock checks, ordering, and minimizing food waste.
What will you bring?
Minimum of 5 years' experience as a Sushi Chef in a luxury hotel or in Japanese cuisine (luxury hotels, resorts, or fine dining preferred).
Skilled in sushi preparation techniques (nigiri, maki, sashimi, specialty rolls) and knife skills.
Knowledge of Japanese culinary traditions and modern presentation styles.
Attention to detail, creativity, and commitment to quality.
Ability to work under pressure in a fast-paced kitchen.
Culinary diploma/certification preferred but not mandatory.
