Sous Chef – The Culinary Specialist
We are seeking a highly skilled and experienced Sous Chef to join our team at Nikki Beach Hospitality Group in Marbella, Spain. This is a full-time, seasonal position that requires a strong leader who can manage the creative and operational heartbeat of the kitchen.
Key Responsibilities:
* Support the Head Chef in overseeing all aspects of kitchen operations, including prep, execution, and service.
* Ensure each dish meets our standards for taste, quality, consistency, and presentation.
* Supervise and coordinate the daily work of all kitchen staff to ensure efficiency and clear communication.
* Lead the kitchen during the Head Chef's absence, ensuring a smooth and productive service.
* Contribute to the creation of specials, seasonal menu updates, and event-specific offerings.
* Oversee mise en place procedures, proper food labeling, storage, and stock rotation using FIFO standards.
* Maintain strict hygiene and HACCP practices, ensuring a clean, safe working environment at all times.
* Assist with inventory control, stock management, and ordering processes to optimize cost and reduce waste.
* Monitor food preparation and plating to maintain consistency and meet service timing expectations.
* Train, coach, and mentor junior kitchen team members, fostering skill development and a respectful kitchen culture.
* Participate in the onboarding and evaluation of new hires within the culinary team.
* Evaluate equipment performance, ensure proper maintenance, cleaning, and reporting of any issues.
* Maintain accurate records for production sheets, temperature logs, cleaning schedules, and checklists.
* Foster collaboration between kitchen and front-of-house teams to ensure smooth service and guest satisfaction.
Required Qualifications And Competencies:
* Proven experience as a Sous Chef or Senior Chef de Partie in high-end or high-volume kitchens.
* Strong leadership, organizational, and multitasking skills in a fast-paced environment.
* Deep knowledge of kitchen operations, food safety, and HACCP standards.
* Passion for culinary arts with a commitment to excellence in presentation and flavor.
* Ability to manage a team calmly and effectively under pressure.
* Solid understanding of stock control, prep planning, and kitchen systems.
* Excellent communication skills and a collaborative, respectful leadership style.
* Fluency in English is mandatory; Spanish or other languages are a plus.
* Flexibility to work varied shifts, including evenings, weekends, and holidays.
