Sous Chef
to join our prestigious pre-opening team for our upcoming luxury dining destination on Marbella's Golden Mile. As part of the internationally acclaimed TATEL family (backed by Rafael Nadal, Pau Gasol, and Cristiano Ronaldo), you will play a crucial role in establishing our signature haute Spanish cuisine concept that blends traditional flavors with contemporary international flair.Key ResponsibilitiesCulinary OperationsSupport the Executive Chef in overseeing all kitchen operations for both restaurant and beach club service.Ensure consistent execution of TATEL's signature Spanish dishes, including rice specialties, croquets, and seafood preparations.Maintain high standards of food quality, presentation, and taste.Assist in menu development and seasonal updates.Supervise all kitchen stations, including cold preparations, hot kitchen, and Spanish techniques.Pre-Opening ResponsibilitiesParticipate in kitchen setup, equipment installation, and workflow optimization.Establish SOPs for kitchen operations.Develop training materials for Spanish cuisine techniques.Assist in recruiting and training kitchen staff.Coordinate with suppliers for Spanish ingredients and seasonal products.Team Leadership & ManagementLead and mentor kitchen staff, fostering a positive environment.Delegate tasks and ensure smooth service workflow.Conduct training on Spanish cooking, presentation, and safety standards.Manage staff schedules and coverage.Step into the Executive Chef role when needed.Quality Control & SafetyImplement HACCP standards and ensure health regulations compliance.Monitor inventory, control costs, and minimize waste.Maintain sanitation and equipment care.Conduct quality checks on dishes before service.Required QualificationsMinimum 4-5 years of culinary experience, with 2-3 years in a leadership role such as Sous Chef.Experience in high-end, fine dining, luxury hotels, or upscale restaurants.Pre-opening restaurant experience preferred.Expertise in Spanish cuisine, including regional specialties and techniques.Technical SkillsAdvanced culinary skills, including knife work and modern techniques.Specialized knowledge in Spanish dishes like paella, tapas, and seafood.Menu development and creativity.Proficiency with kitchen equipment, including Josper grills and professional ovens.Food cost control and inventory management skills.Education & CertificationsCulinary degree or professional training preferred.Food safety certifications (HACCP, ServSafe, or equivalent) required.Valid work authorization for Spain mandatory.What We OfferCompetitive salary package based on experience.Pre-opening team member status with growth opportunities.Professional development in a world-class environment.Work at Villa Tiberio on Marbella's Golden Mile.Collaborative environment with international culinary professionals.
