About the Job
Based at Mandarin Oriental Punta Negra, Mallorca, the Assistant Director of Food & Beverage oversees all operational aspects of the division, supports the Director with administrative tasks, and ensures guest satisfaction consistently meets the standards of both the hotel and the wider group.
Responsibilities
- Assume the Director’s duties in their absence and support daily operations of the F&B; division.
- Monitor guest satisfaction, revenues, costs, sanitation, cleanliness and hygiene to ensure high standards are consistently met.
- Conduct regular inspections and follow‑ups of kitchens, restaurants and outlets, including daily hotel tours and weekly checks.
- Plan activities, promotions and menu implementations with the Director and Outlet Managers according to the annual marketing plan.
- Support staffing functions such as hiring, orientation, performance appraisals, coaching and handling colleague grievances.
- Oversee inventory, beverage and store requisitions, working closely with Outlet Managers, Head Sommelier and Cost Controller.
- Ensure daily SOP training, self‑audits and quality control actions to meet Mandarin Oriental standards and continuously improve operations.
- Uphold hotel policies, health and safety regulations, food safety programmes and promptly manage guest complaints and incident reporting.
Experience and Education
- Degree in Hospitality Management or a related field.
- At least 2–3 years’ experience in a similar role.
- Experience leading teams in Food & Beverage departments.
- Experience in luxury hospitality.
Technical Skills
- Data analysis and reporting: ability to generate and analyse recruitment reports to assess process performance and enable continuous improvement.
- Familiarity with recruiting software and tools (LinkedIn, Indeed, Glassdoor, etc.).
- Knowledge of labor law: understanding local and international laws affecting recruitment, including equal‑opportunity and inclusive hiring practices.
- Positive, proactive attitude and strong sense of responsibility.
- Attention to detail, self‑driven, a team player with good interpersonal skills.
- Proficiency in MS Office (Excel, Word, PowerPoint).
- Effective communication skills in Spanish and English, with strong presentation skills.
