THE ROLE
Join the full‑time culinary team as a Sous Chef, maintaining excellent food, health & safety, and food hygiene standards. Continuously reinvent and implement extraordinary culinary experiences within our stadium environment.
ROLE RESPONSIBILITIES
* Set VIP food specifications with photos and costed recipe cards for match day VIP items and assist with M&E specifications.
* Ensure all legal requirements (Health and Safety at Work, COSHH, Environmental Health, Fire Precautions, etc.) are met.
* Produce menu tariff planning within given timescale and fully costed, ensuring operating targets are met.
* Ensure VIP menu items are available during full menu service while controlling wastage.
* Identify efficiencies within the match day operation to improve P&L and operational performance.
* React quickly and efficiently to client/supporter requests and changes in arrangements and communicate to the catering office and kitchen.
* Maintain departmental food control procedures, keep wastage to a minimum, record on waste control sheets, and complete compliance paperwork for inspection.
* Ensure employees follow clock‑in/out processes and fire register for payroll.
* Support departmental administration, recruitment, and training proactively.
* Support the wider match day team ensuring they are trained to departmental standards.
* Attend weekly meetings to discuss forthcoming business as required.
* Understand ordering systems and navigate the program, placing orders using the purchasing database in line with supplier cut‑offs.
* Carry post‑match and weekly hygiene checks of kitchens.
* Support weekly, game‑by‑game, or monthly stock‑take procedures for accurate recording of food products.
* Communicate with the Executive Chef regarding personal development, training, appraisals, and objectives.
* Assess market trends to identify new commercial opportunities and business cases.
* Support the Executive Chef in the Head Chef’s absence.
QUALIFICATIONS
* Culinary qualifications or equivalent experience and/or training.
* Higher Certificate in Food Control.
* Level 3 Food Safety.
* Level 3 Managing Allergens.
* Level 3 Award in HACCP (Catering).
* Customer focused and solutions driven.
* Good verbal and written communication skills.
* Confident leadership with good motivational qualities.
* Great attention to detail.
* Team player with an understanding of people.
* Open‑minded and able to embrace change.
* Ethical and honest.
* A "can do" and "will do" attitude.
