Mandarin Oriental Punta Negra, Mallorca is looking for a Restaurant Manager to lead the opening of Matsuhisa Mallorca, our signature dining destination in partnership with the world-renowned Chef Nobu Matsuhisa. Matsuhisa Mallorca will bring the famous Japanese Peruvian cuisine of Nobu Matsuhisa to this idyllic setting, combining artistry, flavor, and atmosphere. The role is based at Mandarin Oriental Punta Negra and reports to the Director of Food & Beverage.

Set against the stunning backdrop of Puerto Portals, Mandarin Oriental Punta Negra offers a setting where inspiration flows and bespoke experiences, dynamic culinary journeys, and rejuvenating wellness are designed to immerse guests in Mallorca’s vibrant atmosphere.

About The Job

Based at Mandarin Oriental Punta Negra, you will oversee all operational and administrative aspects of Matsuhisa Mallorca. You will be the driving force behind the restaurant’s performance, quality, and guest satisfaction.

As Restaurant Manager, you will be responsible for the following duties:

* Oversee all operational and administrative aspects of the outlet, prioritizing engagement according to business volumes and related parameters.
* Enforce and monitor that all operational standards, as per policies, SOPs and quality measures, are in place at all times.
* Supervise maintenance and cleanliness of related areas, conduct regular walk-throughs with engineering and housekeeping, and follow up on reports to maintain an immaculate environment.
* Work with the Chef de Cuisine to plan menus, prices and promotional events to maximize revenue in line with market demands.
* Identify areas for improvement in service and food & beverage quality using audits and guest feedback, and formulate action plans with the Chef de Cuisine.
* Observe business forecasts and plan manpower, equipment and supplies efficiently.
* Ensure accuracy and currency of menus (physical and digital) and ensure descriptions are up to date and presented properly.
* Maintain records of Annual Leave and Public Holiday clearance and ensure no accruals within the outlet.
* Handle customer complaints effectively, whether verbal or written.
* Plan and execute special promotional activities and festive season events for the outlet.
* Assist in other outlets if required and attend required meetings as scheduled.
* Be fully conversant with local laws and customs regarding serving alcohol and ensure staff practice responsible service of alcohol.
* Maintain an overview of POS setups and regularly verify item accuracy.
* Monitor the TMS system for the outlets and the monthly P&L, analyzing outlet financials regularly.
* Follow Jardine accounting-related requirements for the outlets.
* Monitor competition, market trends and prices;
provide leadership and support to all colleagues;
train, evaluate and schedule staff;
conduct counselling anddisciplinary action per MO procedures.
* Ensure MOMAL grooming and appearance standards are implemented to reflect professionalism.
* Prepare a weekly roster to maintain service standards within budgeted labour costs and headcounts.
* Provide attentive guest service from arrival to departure in line with MOHG Quality Experiences, Pillars and MOQA standards.
* Build professional relationships with guests, create a positive work environment, and inspire colleagues to create memorable moments (MOWOWs).
* Encourage proactive inter-departmental communication to promote teamwork and enthusiasm.

As Restaurant Manager, We Expect From You

Experience and education

* Degree in Hospitality Management or similar.
* At least 5 years’ experience in a similar role.
* Experience leading teams in Food & Beverage departments.
* Experience in luxury hospitality.

Technical Skills

* Ability to understand guest needs and deliver superior service through initiative and team motivation.
* Ability to work long hours with a strong focus on operational excellence.
* Previous experience in Japanese cuisine is a strong plus.
* Extremely organized with solid administrative capability.
* Proven ability to lead a large and diverse team;
manage large projects and events.
* Ability to use performance management systems and handle disciplinary processes.
* Attention to detail and ability to manage multiple tasks;
competent in MS Office or equivalent.
