This is a foundational role — you will be the heartbeat of the restaurant, operating with the mindset of an owner and reporting directly to the founders.We're not looking for someone to clock in and follow a script. We need a natural leader who takes initiative, builds on existing systems, and upholds a culture of excellence. If you thrive in an environment where no two days are the same and you love the full arc of restaurant operations — from a perfectly set terrace to a clean set of books — this is your role.What you'll ownDaily operationsOpening & closing procedures, floor service, cash reconciliation and daily reporting to foundersPurchasing & stockOrdering, receiving deliveries, inventory management, supplier relationships and invoice controlTeam leadershipHiring, onboarding, scheduling and developing front-of-house staff — with direction from the founders and chefF&B programmeCo-designing and evolving the wine and cocktail programme, tracking cost percentages and targetsAdmin & complianceSending payroll hours to our gestor, maintaining APPCC compliance, health & safety standardsEvents & communityCoordinating with the Ayuntamiento and local partners for cultural and marketing eventsWhat we're looking forFluent English is non-negotiable— our guests are a mix of locals, expats and international visitors, and you will be their primary point of contactFluent Spanish equally essential— for our neighborhood guests, supplier relations, local coordination and leading a Spanish-speaking teamBased in or around Estepona, or genuinely committed to being hereMinimum 5 years of experience in restaurant or hospitality management — we're open to background, but you've held the keys and felt the weight of that responsibilityEqually comfortable on the floor serving tables and behind a spreadsheet managing costs — no task is beneath youReceptive to direction from ownership and the kitchen — you lead your team, and you take direction well xhfqzwm from aboveResponsible for operational costs from day one, with a clear path to full P&L ownership as the concept growsProficient with Agora POS and comfortable with basic bookkeeping and supplier managementAvailable to work evenings, weekends and holidays as agreedOwn vehicle preferredWhat we offerA foundational role in an open concept — you'll shape the culture and systems from day oneCompetitive salary commensurate with experiencePerformance incentives tied to measurable goals — we believe in rewarding resultsReal room for growth as the concept growsA creative, collaborative environment with genuine respect for your expertiseTo apply, please send your CV and a brief note about why this role is right for you to Applications in English only.
